Baking Christmas Cookies
This recipe for roll-out sugar cookies makes great Christmas cookies!
DOUGH
1 cup butter (2 sticks), softened
1 cup sugar
1 egg
1 teaspoon vanilla
2 teaspoons baking powder
3 cups of all-purpose flour
cookie cutters
ICING
2 cups confectioners sugar (more if necessary)
3 ounces cream cheese, softened
5 teaspoons milk
Cream the butter, sugar, egg and vanilla. Sift the flour and baking powder together then add to the creamed mixture. Mix well, using hands if necessary.
Roll out dough about 1/4 inch thick on a floured surface. Cut with cookie cutters.
Bake at 400 degrees for 6-8 minutes on an ungreased cookie sheet. Cool completely.
For icing, mix ingredients above, adding more sugar as needed for desired consistency. Add food coloring to icing, if desired, and decorate cookies with decoration of choice. We like multi-colored sprinkles.
As always, children need supervision when cooking/working in the kitchen.
